Mah Noi Food Lab
The Isan flavor Library is a project started in July of 2021. Two chefs: Chef Num and Curtis working together under the name Mha Noi Food Lab with a commited focus on creating and developing flavors, products, and culinary techniques using the regional ingredients.
Mah Noi Food Lab is fully equipped to safely test an array of fermentations ranging from growing edible molds, to saccharification of local grains, to enzymatic breakdown of proteins in meat, fish, and insects.
The project has completed testing and research on over 200 flavors from Isan local and seasonal ingredients. Aside from compiling a comprehensive archive of the flavors of Isan, they aim to bring awareness to the local farmers and producers of the region, especially those practicing biodynamic and regenerative agriculture. By creating products and flavors featuring their ingredients, Chef Num and Curtis believe the project can generate a creative and effective sustainable transformation to the region. With a mission to share their gained knowledge with the local community and global gastronome peers, we welcome you to join-give them support and reflect on this exciting endeavor.
